This espresso envelops you from the first sip. Mexico Mad Mash has a profile built on deep, dark sweetness and a calm, dessert-like structure.

Creamy nougat appears at first – smooth, slightly nutty, and pleasantly milky. A moment later, the flavor deepens towards dried plum, which brings a delicate fruity ripeness and a subtle, refined liqueur note. The whole is held together by molasses – thick, intense, giving the espresso a distinctive sweetness and a long, satisfying finish.

The beans come from the Los Altos region in Chiapas, at an altitude of 1,700–1,780 meters above sea level. These conditions allow for the development of sugar concentration and full flavor. Washing imparts purity and balance to the profile, ensuring that even the deep, sweet notes remain structured and elegant.

Caturra and Catuai varieties They are responsible for the good structure, creamy body, and natural sweetness. The result is an espresso with low, mild acidity, full-bodied, smooth, and extremely approachable.

Mexico Mad Mash It works great on its own – as a classic, sweet espresso – but it also works well in milk coffees, where the notes of nougat and molasses create an almost dessert-like character.

We absolutely believe in the quality of our products, but if you want to make a return, you can count on our help and full support.

How to do it?

  • Within 30 days of receiving your order, send us a message at sklep@lacava.pl with the following information: order number, returned items, pickup address and preferred pickup date, reason for return (optional)
  • We will send you a DPD courier waybill, which will collect the returned, packed items, and then you will receive a refund of the costs incurred within 14 days of us receiving the package.
  • You can of course bring the returned items to our coffee roastery
  • Returns are free of charge, unless you do not want to use our DPD courier, in which case you must send the parcel yourself
  • you can return all products as long as they are unused and the packaging is open

A combination worth trying

Caturra and Catuai are a duo that has been building the foundation of quality in Latin America for years – including in the mountainous Los Altos region of Chiapas. Caturra is a natural mutation of Bourbon, prized for its clean profile and distinct, structured sweetness. In the cup, it often offers good structure, a creamy body, and pleasant, ripe fruitiness. It's a varietal that can be elegant and balanced, especially at higher altitudes, where it develops depth and sugar concentration. Catuai was created by crossing Caturra and Mundo Novo. It is more resistant and stable in cultivation, but equally important is what it brings to the taste – smoothness, fullness, and caramel sweetness. In espresso, it often contributes to the creaminess and dessert-like character that pairs so well with notes of nougat or molasses.

Mexico Mad Mash coffee comes from the Los Altos region in Chiapas – one of Mexico's most highly-regarded coffee-growing areas. This mountainous terrain, located at an altitude of 1700–1780 meters above sea level, benefits from cooler nights and significant temperature swings, which promote the slow maturation of the coffee cherries. This extended ripening period directly translates into a higher concentration of sugars and greater depth of flavor in the cup. Chimhucum is a local community of producers who have been cultivating coffee on small, family-owned plots for generations. Harvesting is done manually, with care taken to select only ripe cherries, which are then processed using the washed method. This washing process emphasizes the cleanliness of the profile and helps maintain a balance between sweetness and body. Los Altos is a region where tradition meets an increasing awareness of quality. The altitude, fertile soils, and experience of local producers result in coffees with a deep, dessert-like character and a well-structured, elegant profile – exactly what you will find in this cup.

How to brew?

Espresso

1. WEIGH

We recommend 18 grams of beans. With El Cocal beans, we aim to achieve distinctive and exotic accents.

2. GRIND

Adjust your grinder for this coffee to get a 45ml yield in 25-27 seconds for a double shot.

3. PREPARE

Remember to distribute the ground coffee well in the portafilter and tamp with moderate pressure.

4. WATCH

The coffee flow should be thick and continuous to achieve the desired yield over time. Enjoy!
