LaCava is a coffee roastery with a heart, whose mission is to deliver a unique coffee experience with complete respect for nature and the people involved in the growing and production process. Our philosophy is based on attention to every detail—from selecting the finest beans to a precise roast that brings out the beans' full potential. By collaborating with small, responsible growers, our specialty coffee not only tastes phenomenal but also contributes an element of social and environmental responsibility to our ecosystem.

Providing our customers with an exceptional coffee experience is the goal of our roastery. It's a multi-stage process that allows us to create unique products that we believe bring an element of beauty to our customers' daily lives.

It all starts

On the plantation.

We believe that one of the most important tasks of a coffee roastery is to obtain the unique, exceptional raw material of green coffee.

We aim for sweet coffees with noticeable sensory notes, a distinct character and fruitiness.

We source green coffee in many ways: directly from our presence on the plantation (direct trade), through partners and distributors of specialty coffee.

Because we focus on the seasonality of specialty coffee, our goal is to roast beans that are as fresh as possible, meaning they come from a recent harvest.

Our craft oven.

Probate. Precise and with soul.

The Probatone 25 is a drum roaster from the legendary Probat brand, which we purchased in 2015. This German company has been producing roasters since 1868 and is now considered a manufacturer of the highest quality specialty coffee roasters.

A 25 kg green coffee batch allows for small but very precise batches. We love Probat for emphasizing the coffee's chocolate and nutty notes, as well as enhancing the body so beloved by coffee lovers.

For special tasks.

Diedrich CR70. A true monster.

Purchased in 2022, the Diedrich CR70 combines traditional craftsmanship with the latest technologies in specialty production. More controllable parameters, highly detailed airflow control, and temperature control in the final stages of roasting using unique heat exchanger technology are just some of this machine's many outstanding features.

The 70 kg capacity allows for the entire bag to be filled at once. This allows our best-selling coffees to be refined by this magnificent machine.

Caroline.

She joined LaCava in May 2022 and since then has demonstrated at every step her uncompromising approach to quality and her willingness to learn the craft of coffee and explore all aspects of its production.

She's a true talent, to say the least. At LaCava, she's currently responsible for profiling new beans, sensory evaluation of samples, conducting production cuppings, and, of course, roasting specialty beans.

She has numerous certificates and training confirming her competences, although her greatest strength is her comprehensive roasting experience and very positive and warm energy, which also permeates the grain.

Alec.

He joined the LaCava team in 2021 and has revolutionized the way our roastery operates and works from the very beginning. He is the guardian of accuracy, order, cleanliness, and the organization of all processes responsible for the flawless operation of the roastery.

LaCava in its current form is the result of Alka's excellent work in modernizing our product offerings, introducing innovative products, and establishing relationships with plantations and green coffee suppliers. He introduced a quality control regime that positions our roastery as a model in the industry.

On a daily basis, he deals with sourcing green beans (bringing and testing dozens of samples from various origins), preparing test roasts, profiling new coffees, and quality control at every stage of production.

Known since 2022 as the Polish Roasting Champion and Polish Cup Tasters Champion, it also holds the extremely difficult-to-obtain Q Grader Arabica certification.

Green coffee

Without fresh, exceptional-quality raw ingredients, there's no way to create an outstanding cup of coffee. Alek and Karolina test dozens of samples of new, fresh beans during the pre-shipment phase to select the true gems. Test cupping on samples is the foundation of every specialty roastery.

Once brought to our warehouse, green coffee is stored in a cool, dry and shaded warehouse under fully controlled conditions.

Repeatability is key

Between roasts, we use a "Between Batch Protocol" that resets the heat stored in the kiln, ensuring that each roast is perfectly repeatable. As a result, the flavor of a given coffee is consistent from batch to batch.

We use top-of-the-line Cropster software to verify the repeatability and accuracy of our production processes. It allows us to track virtually every firing and its parameters going back many years.

We control every batch

After profiling (determining the detailed roasting method) a given bean, we determine QC parameters such as color, roasting time, final temperature, development time, and many others. This allows us to establish a quality standard, coffee character, and sensory notes that will be consistent in every batch.

We use specialized measuring equipment to check the parameters of roasted coffee. Each roast must meet these criteria to be approved for cupping and subsequent sale.

Separate and controlled green coffee storage.

Storage matters.

Quality in the cup doesn't just happen. As one of the few craft specialty coffee roasters in Poland, we place great importance on storing our raw materials .

24/7 monitoring of temperature, humidity, and atmospheric pressure. Additionally, a separate, lockable room without thermal exchange.

Thanks to this puristic approach, we guarantee that the roasted beans are properly stored and the effects of grain aging are optimally minimized.

This is the foundation of our daily roasting operations and our uncompromising approach to quality control (QC). Each roast of specialty coffee is checked for compliance with the parameters defined during the development of a given coffee's profile.
