Our philosophy is based on attention to every detail—from selecting the finest beans to a precise roast that brings out the beans' full potential. By collaborating with small, responsible growers, our specialty coffee not only tastes phenomenal but also contributes an element of social and environmental responsibility to our ecosystem.

Quality Control (QC)

Green coffee
Without fresh, exceptional-quality raw ingredients, there's no way to create an outstanding cup of coffee. Alek and Karolina test dozens of samples of new, fresh beans during the pre-shipment phase to select the true gems. Test cupping on samples is the foundation of every specialty roastery.
Once brought to our warehouse, green coffee is stored in a cool, dry and shaded warehouse under fully controlled conditions.
Repeatability is key
Between roasts, we use a "Between Batch Protocol" that resets the heat stored in the kiln, ensuring that each roast is perfectly repeatable. As a result, the flavor of a given coffee is consistent from batch to batch.
We use top-of-the-line Cropster software to verify the repeatability and accuracy of our production processes. It allows us to track virtually every firing and its parameters going back many years.
We control every batch
After profiling (determining the detailed roasting method) a given bean, we determine QC parameters such as color, roasting time, final temperature, development time, and many others. This allows us to establish a quality standard, coffee character, and sensory notes that will be consistent in every batch.
We use specialized measuring equipment to check the parameters of roasted coffee. Each roast must meet these criteria to be approved for cupping and subsequent sale.
