Caffeine is one of the most recognizable ingredients in coffee, yet also one of the most misunderstood. Many myths have grown around it: that espresso "wakes you up" more than pour-over, that light roast coffee has less caffeine, or that specialty coffee is "weaker." Meanwhile, the reality – as is often the case in the world of coffee – is much more complex and interesting.
Espresso vs. pour-over – what really contains more caffeine?
At first glance, the answer seems obvious: espresso tastes more intense, so it must contain more caffeine. In reality, however, everything depends on how you ask the question. A serving of classic espresso (approx. 25–30 ml) contains on average 60–80 mg of caffeine. In comparison, a cup of pour-over coffee (250 ml) can contain from 120 to even 180 mg of caffeine.
The difference stems from the contact time of water with coffee and the volume of the beverage. Espresso is a short, concentrated extract, but pour-over – brewed slower and in a larger quantity – delivers more caffeine to the body per cup. That's why a morning coffee from a dripper or Chemex often works "longer," despite its milder taste.
Botanical variety – a key factor
One of the most important, yet rarely recognized, factors influencing caffeine levels is the coffee variety. Arabica, which dominates the specialty world, naturally contains about 1–1.5% caffeine in dry mass. Robusta – even twice as much. That's why specialty coffees, based almost exclusively on Arabica, are often perceived as "milder," even though their flavor profile is much richer.
It is worth adding that caffeine in the plant serves a defensive function. Varieties growing at higher altitudes, in a more stable climate, do not need as much – hence the lower caffeine level in high-altitude Arabicas.
Processing – myth or real influence?
It is often said that natural processing "adds caffeine," and washed processing "leaches it out." From a scientific point of view, these differences are minimal. Processing primarily affects the aroma, sweetness, and structure of the coffee, not the caffeine content itself. Any potential differences are secondary and result rather from the specific variety or bean density than from the processing method itself.
Roast level – light or dark?
This is one of the most persistent coffee myths. Contrary to intuition, dark roast coffees do not mean more caffeine. During roasting, caffeine is relatively stable – it does not "burn off" significantly. The differences we observe are mainly due to dark roast beans being lighter and more porous. If we measure coffee by volume (e.g., with a spoon), light roast can even deliver slightly more caffeine because the beans are denser.
In practice, when weighing coffee – which is standard in the specialty world – the roast level has a negligible impact on the caffeine level in the cup.
Caffeine in specialty coffee – less, but better?
Specialty coffee is often associated with "clean energy" – without a sudden spike and crash. This is not magic or marketing, but rather the result of raw material quality, precise roasting, and better extraction. A more stable flavor profile, fewer defects, and more predictable brew chemistry mean that caffeine works more gently and for longer.
In the world of specialty, caffeine ceases to be an end in itself. It becomes one of the elements of a complex experience – an addition to flavor, aroma, and ritual. And perhaps that is why a well-brewed cup of coffee can awaken not only the body but also the senses.
