In the Palestina region of Huila, Colombia, at an altitude of 1,710 meters above sea level, this coffee combines modern processing with the unique Sidra variety. Colombia San Gabriel is an intense, deep filter where fruitiness and complexity go hand in hand.

Anaerobic Natural processing imbues the beans with a distinctive sweetness and a rich, fermented character. Ripe cherries are fermented in controlled, anaerobic conditions and then dried whole, concentrating their natural sugars. The result is a cup full of plum aromas, thick honey, and an intriguing hint of coffee pulp, which brings a dried fruitiness and a slightly winey character.

The entire collection is based on the Sidra variety—a rare, prized hybrid that combines Typica and Bourbon genetics. It's one of the most aromatic varieties grown in Colombia, known for its floral character, deep sweetness, and creamy texture.

How to do it?

  • Within 30 days of receiving your order, send us a message at sklep@lacava.pl with the following information: order number, returned items, pickup address and preferred pickup date, reason for return (optional)
  • We will send you a DPD courier waybill, which will collect the returned, packed items, and then you will receive a refund of the costs incurred within 14 days of us receiving the package.
  • You can of course bring the returned items to our coffee roastery
  • Returns are free of charge, unless you do not want to use our DPD courier, in which case you must send the parcel yourself
  • you can return all products as long as they are unused and the packaging is open

Demanding to cultivate

Sidra is one of the most fascinating and sought-after Arabica varietals in Colombia. Its origin combines Typica and Bourbon genetics, which gives it an extraordinary balance between aroma and delicate structure. It is a particularly demanding varietal to cultivate—it grows slowly, requires a stable microclimate, and is susceptible to weather fluctuations—but in return, it yields beans with excellent sensory potential. Sidra is renowned for its intense sweetness, distinct fruitiness, and a floral, almost tea-like character. In coffees processed using natural and anaerobic methods, it can fully display its expressiveness: deep stone fruits, nectar-like sweetness, and a creamy texture. In Colombia San Gabriel, this varietal is combined with Anaerobic Natural processing, creating a profile where you will find plums, thick honey, and a hint of coffee pulp, lending elegant complexity to the entire composition.

San Gabriel is a small farm located in the Palestina region of Huila, Colombia – a place that has long been considered one of the finest terroirs for specialty coffee. It is here, at an altitude of 1710 meters above sea level, that beans of exceptional purity and aromatic intensity are produced. The microclimate combines warm, sunny days with cooler nights, which slows down the ripening of the cherries and allows them to concentrate their natural sugars. The farm specializes in cultivating high-quality varieties, and its pride is Sidra – a variety that demands immense care but rewards with a spectacular cup profile. Every stage of work – from selective harvesting to slow drying – is performed manually, with meticulous attention to ensuring full control over the quality of each batch. The producer places particular emphasis on modern, experimental processing methods. For this particular lot, Anaerobic Natural processing was used, which requires precision and experience to extract intense sweetness and deep fruitiness from the coffee without losing clarity of flavor.

How to brew?

Aeropress

1. WEIGH

We recommend using 16.5 grams of coffee per 250 grams of water. This will result in a juicy brew with a pleasant body.

2. BREW

We recommend distributing water at 94˚C in 2 portions - 50 grams for a thirty-second pre-infusion, then 200 grams.

3. PUSH IT THROUGH

Start pressing at 1 minute and 50 seconds – this should take you about 30 seconds. Remember to remove the device from the scale and press into a safe container.

4. WATCH

If the taste of the brew isn't to your liking, adjust the grinder settings next time you make coffee. Let your taste and preferences guide you!
