Since the LaCava roastery was founded in 2009, our ambitions have always gone beyond simply producing high-quality coffee. From the very beginning, our goal has been to exceed industry standards, challenge the rules, and create products brimming with passion, history, and the DNA of our team.

We set out to be pioneers in the coffee industry, to challenge consumers, the market, and our competitors, and to truly transform the world of coffee. A transformation that makes customers realize that coffee can be a richly flavored and diverse product, a true pleasure, not just a source of satisfaction. We go even further, and our goal is to enable our customers to participate in the diverse development of the coffee industry by supporting projects that fairly compensate coffee farmers and create better living conditions for them.

As a coffee roaster, we are the link between the "origin"—the place where the coffee beans originate—the farmer, their family, and their passion for growing them, and the final cup of coffee. Our goal is to unleash the full potential of the beans selected by our team. We achieve this through expert roasting, the profiling of each product, and the use of cutting-edge technologies designed to produce the highest quality coffee.

For us, understanding how the origin, the farmer's work, the terroir, and processing methods influence every aspect of coffee's flavor and quality is absolutely fundamental. We investigate how flavor pathways originating in the bean are created and enhanced, and how they are enhanced or suppressed during the roastery's production processes. We always strive to capture and emphasize the original character, spirit, history, and origin of the bean.

As the link between the coffee plantation and the cup, we question and change the generally accepted rules of production and roasting so that our coffees are always the most innovative and contain the "X" element unique to the LaCava brand. 

Together with our amazing team, we pursue a larger goal and set ourselves the task of creating the most thought-provoking and flavor-provoking coffees on the market. We hope that our work will influence and transform the world of coffee into a richer, bolder, and more diverse one.
